茶马古道及其相连的边地交流网络,长期推动着商品、人口、技艺与生活习俗在云南不同生态区域之间流动。云南特色米面杂粮食品既受稻作、麦作和高原杂粮生产条件制约,也在多民族交往、边境往来、市场贸易与礼俗实践中不断发生地方化。本文采用文献梳理与案例比较方法,以丽江粑粑、傣族糯米食、红河哈尼红米食、永胜他留人粑粑及迪庆青稞食品为观察对象,讨论茶马古道与边地文化交流背景下食品原料、制作技艺、食用结构和文化意义的重组机制。研究发现:云南食品的地方化并非外来要素的简单移植,而是通过生态适配、技艺选择、族群互动和仪式化表达形成的复合过程;不同食品在交流网络中的位置并不相同,应避免以单一的“古道影响”解释所有地方食品;当代传承应在尊重原料产地、地方知识和社群主体性的基础上,建立可追溯的文化叙事与适度的产业转化路径。

The Tea-Horse Road and its connected borderland exchange networks enabled the long-term circulation of commodities, people, techniques, and everyday foodways across Yunnan’s diverse ecological regions. Specialty foods made from rice, wheat, and coarse grains in Yunnan are shaped not only by local agricultural conditions but also by interethnic interaction, cross-border contact, market exchange, and ritual practice. Using literature review and comparative case analysis, this study examines Lijiang baba, Dai glutinous-rice foods, Hani red-rice foods in Honghe, Taliu baba in Yongsheng, and highland barley foods in Diqing. It explores how ingredients, techniques, consumption patterns, and cultural meanings are reorganized through the Tea-Horse Road and borderland cultural exchange. The findings show that localization is not a simple transplantation of external elements; rather, it is a composite process involving ecological adaptation, technical selection, ethnic interaction, and ritual expression. As the selected foods occupy different positions in exchange networks, a single causal narrative of “Tea-Horse Road influence” should be avoided. Contemporary transmission should build traceable cultural narratives and appropriate industrial transformation while respecting local materials, knowledge, and community agency.
